Preheat the oven to 350.
In a large bowl, coat the sliced apples with sugar and cinnamon.
In a separate bowl, mix flour, sugar, oil, eggs, orange juice, baking powder and vanilla extract until smooth.
Transfer a third of the batter into your prepared baking pan, alternating layers of batter with layers of sliced apples.
Bake for 75-90 minutes, or until a toothpick comes out clean from the center of the cake. When you remove the cake from the oven, let it cool for 30 minutes or an hour before inverting or removing it from the pan.
