Bakery-Style Scones with Fruit

This basic scone formula can be modified with as many variations as you fancy. Here are some flavors I’ve tried in the past: Fresh Raspberries with Passionfruit Glaze, Blood Orange Raspberry Rosemary Lemon, Blueberry Lavender and Strawberry Goldenberry with Thyme. Whatever flavor you choose, the end result is a flaky and soft scone that tastes like you’ve bought it from a local bakery. These scones are very easy to make and easy to enjoy!

Bakery-Style Scones with Fruit

Ingredients
  

  • 1/2 c heavy cream
  • 1 egg
  • 1 tsp vanilla extract
  • 2 c AP flour
  • 1/2 c sugar
  • 1/2 tsp salt
  • 1/2 c butter
  • 1-1.5 c add ins (fruit, chocolate, seeds, herbs)

Method
 

  1. Whisk together your dry ingredients. Then, add in the cold, cubed butter and use your fingers to combine with the flour until crumbly.
  2. Create a well in the center of the bowl to add in your wet ingredients. Gently stir with a silicone spatula or spoon.
  3. Knead the dough with your hands briefly before placing it onto a lightly-floured surface. If the dough is too dry, you can add a bit of heavy cream. If it is too sticky, add a bit more flour as needed.
  4. Shape the dough into a disc shape and cut it into 8 equivalent wedges using a knife or a scone cutter.
  5. Place the scones onto a baking sheet with parchment paper and place in the refrigerator for about 5-10 minutes. Meanwhile, preheat your oven to 400 degrees.
  6. Brush the scones with a bit of egg wash or heavy cream and sprinkle with sugar, if you'd like.
  7. Bake for 18-25 minutes until golden. Let them cool before serving.
