Austrian Linzer Cookies (Nut-Free)

As someone who loves sweets but is very careful about eating out due to allergies and exposures to processed ingredients, one cookie recipe I have grown to absolutely love making is the linzer cookie. It’s incredibly simple, sweet and satisfying. Plus, it’s an enjoyable gift for loved ones.

The linzer cookie was inspired by the linzertorte, a traditional pastry made in Austria which looks very much like a pie. It’s made from a shortbread crust and filled with preserves. In any case, the linzer cookie is a classic sandwich cookie and can be made with a variety of fillings like raspberry, apricot, lemon curd, caramel or chocolate.

Typically, the recipe contains almond flour or almond extract – both of which I’ll be skipping in this recipe in order to make it completely nut-free!
